There’s nothing like a good home cooked meal, or better yet one that you can bring around. Packed food is undeniably a healthier option as compared to eating out, and yet 60% of Singaporeans eat out at least four times a week. Not only does that hurt our wallets, but our health and environment as well.

Why do Singaporeans eat out so often? This can be blamed on 3 reasons. One, we have no time or energy. Two, meals are a social affair. Three, we don’t know how to cook (but don’t worry, we’ll show you three simple recipes and you don’t need to be Gordon Ramsey to whip them up).  

The Initiative

The LunchBox Movement was started towards the end of 2016 in hopes of cultivating the habit of bringing food from home, rather than eating out regularly. The movement has since gained attention on Instagram through the hashtag #TheLunchBoxMovement. The LunchBox Movement team has encouraged pledgers to post their home packed lunches on their instagrams with the hashtag where they then select a few to feature on their “Pledger’s Weekly Feature” post.

Here are 3 easy recipes yet interesting ways to pack food from home so that you too, can join in the movement.
 

1. Egg-vocado

Tired of the usual egg on toast? Switch it up by adding an egg and an avocado, to get an egg-vocado. This is not only quick to make but is also uniquely delicious. Here’s what we mean.

What you’ll need:

  • 2 avocados

  • 50g smoked salmon (or bacon)

  • 4 eggs

  • Salt

  • Black pepper

  • Chili flakes

  • Fresh dill

  • Salad

Instructions

  • Preheat oven to 220°F.

  • Cut the avocados in half and remove the seed. (If the hole is too small, scoop out some avocado)

  • Line the hollows with strips of smoked salmon.

  • Crack each of the eggs into a bowl and slowly scoop as much egg as possible to fill the hole

  • Add salt and fresh cracked black pepper on top of the eggs, to taste

  • Bake for about 15-20 minutes

  • Sprinkle chili flakes and fresh dill on top (or crumbled bacon, if you’d like)
     

2. Sushi Burrito

What you’ll need:

  • Japanese rice

  • Roasted Nori (Seaweed)

  • Sushi Ingredient of your choice (Salmon, Tamago, avocado, sweet pickles, cucumbers etc)

  • Bamboo mat

You can’t go wrong with this one. The steps are easy, simply lay out the seaweed onto the sushi mat and spread the rice on top. Finish off by added ingredients of your choice and roll it tight. Then, you’re done! The best thing is, you can customize the ingredients each time so you’ll have a wide variety.

3. Pasta

Mmm, nothing like good old pasta. This is one that never gets old because of the many ways you can cook it— with cheese, olive oil, cream sauce, tomato sauce, in salad form… yes, you get the idea.

Or, you could get creative and put them in mason jars.

What you’ll need:

  • 100g of Pasta (any kind you prefer)

  • Canned sauce (if you really have no time)

  • Or, make your own sauce

For this, cook the pasta as you normally would. If you are unfamiliar, this will help. You may use any type of pasta to suit your preference. There is really no one way to cook your pasta, you can even try changing the vegetables used or add ingredients like mushrooms, chicken or prawns to your liking. It’s really up to you!
